Bottled in Bond Corn Whisky
This whisky is distilled from our bourbon mash and aged for 7 years in new, toasted white oak barrels. Customers ask what the difference is between a charred and toasted barrel. Think of it like this: Charred is the barrel shouting at the whisky; toasted is the barrel having a conversation with the whisky. This product is not chill filtered, and after adding a few drops of water, an amazing butterscotch aroma and flavor dominates. Fun fact: this was supposed to be bourbon, but our supplier sent toasted barrels which led to this new product idea from our owner/distiller, Mike!

1oz Amaretto
1oz fresh lemon juice
maraschino cherries (for garnish)
Instructions
Fill a cocktail shaker with ice. Add the bourbon, amaretto and lemon juice and shake well. Strain into a Clayton Distillery 9oz square rocks glass filled with ice and garnish with cherries.
Heatwave Cinnamon Whisky
Our cinnamon flavored whisky is double distilled from our bourbon mash to 175 proof in our hybrid pot still. We then age it for 5-6 years in our used bourbon barrels. The finished whisky is infused with cinnamon sticks for several days and sweetened with homemade simple syrup. The final product yields a smooth whisky with a subtle cinnamon flavor. Our whisky does not have the red hot cinnamon pop of Fireball or Jack Fire. We have found that most customers really enjoy the subtleness of the cinnamon flavor, while still tasting how amazing the whisky is. This spirit is perfect on the rocks!

NY Straight Bourbon Whisky
A customer favorite! Our bourbon is a blend of 83% corn, 11% rye, 6% malted barley. Using our hybrid pot still, we double distill our bourbon to just under 160 proof which produces a very smooth whisky. After 4-5 years in medium charred, new white oak barrels, we lightly filter and bottle three barrels per batch. Because we do not chill filter our bourbon, it retains all the flavor and has a very nice mouth feel. With notes of butterscotch, vanilla, caramel & chocolate, it is best served neat or on the rocks. It also makes a superb old fashioned or mint julep. Note: from time to time, we release single barrel batches that are bottled at barrel strength and aged 6-8 years.

Thousand Islands Maple Whisky
Our maple flavored whisky is one of our most popular products! It is made from only 2 ingredients: whisky and pure local maple syrup. Similar to the cinnamon whisky, we double distill our bourbon mash to 175 proof and age it for 5-7 years in our used bourbon barrels. The finished whisky is then infused with the maple syrup made by Mike’s friend and elk hunting buddy. This incredibly smooth whisky combined with the maple syrup adds another whole level of yum to an old fashioned cocktail. You can also use it as an alternative in a mule, or its delicious mixed with cranberry lime seltzer or ginger ale. Try it drizzled over pancakes or French toast for a surprise twist at brunch!
