When you want to kick it up a notch, our Navy Strength is a stronger version with the same botanicals and spices.
The spirit that our owner and distiller Mike is most proud of!  Gin has always been his spirit of choice, long before opening a distillery.  Mike worked on many variations in his process and recipe, over the past decade, to produce a gin that he is extremely proud of!   This is a London Dry “Gin Lovers Gin”, with a strong juniper flavor.  It is made from our grain neutral spirit & carbon filtered. Juniper & coriander are added twenty four hours prior to the 3rd distillation, then the remaining spices are added and pot distilled to 150 proof.  It is then slowly diluted to bottling strength and aged in a stainless steel tank for 5 weeks. The last step is to lightly filter and bottle.

Thousand Islands Maple Whisky

Thousand Islands Maple Whisky

Our maple flavored whisky is one of our most popular products! It is made from only 2 ingredients: whisky and pure local maple syrup.  Similar to the cinnamon whisky, we double distill our bourbon mash to 175 proof and age it for 5-7 years in our used bourbon barrels.  The finished whisky is then infused with the maple syrup made by Mike’s friend and elk hunting buddy. This incredibly smooth whisky combined with the maple syrup adds another whole level of yum to an old fashioned cocktail.  You can also use it as an alternative in a mule, or its delicious mixed with cranberry lime seltzer or ginger ale. Try it drizzled over pancakes or French toast for a surprise twist at brunch!

This whisky is distilled from our bourbon mash and aged for 7 years in new, toasted white oak barrels.  Customers ask what the difference is between a charred and toasted barrel.  Think of it like this: Charred is the barrel shouting at the whisky; toasted is the barrel having a conversation with the whisky.  This product is not chill filtered, and after adding a few drops of water, an amazing butterscotch aroma and flavor dominates. Fun fact: this was supposed to be bourbon, but our supplier sent toasted barrels which led to this new product idea from our owner/distiller, Mike!

Heatwave Cinnamon Whisky

Heatwave Cinnamon Whisky

Our cinnamon flavored whisky is double distilled from our bourbon mash to 175 proof in our hybrid pot still.  We then age it for 5-6 years in our used bourbon barrels. The finished whisky is infused with cinnamon sticks for several days and sweetened with homemade simple syrup.  The final product yields a smooth whisky with a subtle cinnamon flavor.  Our whisky does not have the red hot cinnamon pop of Fireball or Jack Fire.  We have found that most customers really enjoy the subtleness of the cinnamon flavor, while still tasting how amazing  the whisky is. This spirit is perfect on the rocks!

Limoncello

Limoncello

One of our most popular products and a customer favorite! We spend the fall/winter hand zesting approximately 2,000 lemons. It is a time consuming process, but we would not change a thing! The lemon zest is added to a stainless steel barrel, where it steeps in 191 proof grain neutral spirit for a minimum of ninety days to extract the oil from the zest. We then filter and add a homemade simple syrup.  The end result is a light, refreshing spirit that is best enjoyed chilled. It makes a fabulous martini or we recommend trying it in homemade limoncello bars!
